Head Chef required for a leading Central London venue! Situated within a historic and modern architectural masterpiece, with a team of award winning chefs, unrivalled customer service trained staff and a beautiful choice of event spaces.
The Head Chef will be responsible for managing a large team including 9 chefs and 7 kitchen assistants. The Head Chef must demonstrate an understanding of due diligence, quality control, with a focus on training, leading and motivating the team to achieve profit, audits and customer service expectations. With a balanced and knowledgeable approach to the administration side of the role.
Head Chef Responsibilities:
- Attain and maintain wage, stock and budgetary controls - Ability to understand and contribute to weekly reporting on operational levels with sound knowledge of KPIs - Contribute to the design, cost and review the menus, offers and Events packages on a regular basis - Maintain management control systems to constantly monitor the effectiveness of packages being offered - A deep logistical knowledge of the day-to-day trading business and maintain smooth running of all operations including Events - Ensure kitchen standards, procedures, health regulations, recipes, portion control and cleaning schedules are adhered - Monitor all recycling within the kitchen, food stock takes on a weekly/monthly basis - Ensure orders on a daily basis, to maintain stock levels for the 7 day week operation to support the business needs - Manage quality and rate of kitchen output, whilst monitoring appearance of foods on public display, and making necessary changes when needed. - Lead team in high customer service standards - Build professional links with suppliers - Practise and monitoring of HACCP with all food areas with responsibility for HACCP and COSHH - Extensive knowledge of evacuation procedures and ability to lead evacuation of the kitchen, in the event of an emergency - Monitor and ensure servicing of all kitchen equipment - Contribute to staff appraisals and developing their personal development plans - Provide and maintain a learning environment for all staff - Build a strong working relationship with all departments across the organisation
